Recipe: Homemade Ramen Noodle Soup


Ingredients:
- 1 pack of Winner ramen noodles
- 4 cups chicken or vegetable broth
- 2 cups water
- 2 tablespoons soy sauce
- 1 tablespoon miso paste
- 1 tablespoon sesame oil
- 1 teaspoon grated fresh ginger
- 2 cloves garlic, minced
- 1 teaspoon chilli paste (optional, adjust to taste)
- 1 cup sliced shiitake mushrooms
- 2 cups baby spinach or chopped kale
- 2 boiled eggs, halved (optional)
- Sliced green onions and sesame seeds for garnish
- Sliced cooked chicken, pork, or tofu (optional)

HOMEMADE RAMEN NOODLE SOUP


Instructions:

1. Prepare the Broth:
- In a large pot, combine the chicken or vegetable broth, water, soy sauce, miso paste, sesame oil, grated ginger, minced garlic, and chilli paste (if using). Stir well to combine.
- Bring the broth mixture to a gentle simmer over medium heat. Let it simmer for about 10-15 minutes to allow the flavours to meld together.

2. Cook the Ramen Noodles:
- While the broth is simmering, bring a separate pot of water to a boil.
- Add the Winner ramen noodles to the boiling water and cook according to the package instructions, usually about 2-3 minutes until al dente.
- Once cooked, drain the noodles and rinse them under cold water to stop the cooking process. Set aside.

3. Add Mushrooms and Greens:
- After the broth has simmered for 10-15 minutes, add the sliced shiitake mushrooms to the pot.
- Let the mushrooms cook in the broth for about 3-5 minutes until they are tender.
- Add the baby spinach or chopped kale to the pot and let it wilt in the broth for another 1-2 minutes.

4. Assemble the Ramen Bowls:
- Divide the cooked ramen noodles evenly among serving bowls.
- Ladle the hot broth, mushrooms, and greens over the noodles, making sure to distribute them evenly.
- If desired, add sliced boiled eggs and sliced cooked chicken, pork, or tofu to each bowl.

5. Garnish and Serve:
- Garnish the ramen noodle soup with sliced green onions and sesame seeds for added flavour and texture.
- Serve hot and enjoy your delicious homemade ramen noodle soup!

Note: Feel free to customise your ramen noodle soup with additional toppings such as sliced nori seaweed, bamboo shoots, corn kernels, or bean sprouts. Adjust the seasoning according to your taste preferences, adding more soy sauce or miso paste if desired.
