Chuan Lao Hui Dried Chilli Round (Zi Dan Tou / 子彈頭) is a Chinese dried chilli variety commonly used in Sichuan cooking. Named “bullet head” for its short, rounded shape, these chillies have a noticeable heat with a rich chilli aroma. Suitable for Sichuan stir-fries, dry pot dishes, hot pot bases, chilli oil and other spicy Chinese dishes. They can be used whole, cut into sections or fried in oil to release their aroma.
