Chinese leaf, or Napa cabbage, is a key ingredient in traditional Korean kimchi. To make kimchi, the cabbage is first salted and left to wilt, drawing out excess water and allowing it to absorb flavours more effectively. After rinsing and draining, it is mixed with a spicy paste made from ingredients such as gochugaru (Korean red pepper flakes), garlic, ginger, and fish sauce or salted shrimp. Additional ingredients like radish, green onions, and carrots may be added for extra flavour and texture. The mixture is then packed tightly into jars and left to ferment at room temperature for a few days before being stored in the refrigerator, developing the tangy, spicy, and umami-rich flavours characteristic of kimchi. Napa cabbage is also excellent in stir-fries, retaining its crunch and mild flavour when cooked briefly with other vegetables, meats, or tofu.
