Chinese New Year Sticky Rice Cake (Nian Gao) Recipe

Ingredients

  • Glutinous rice flour

  • Sugar (white sugar or brown sugar)

  • Water

  • Vegetable oil (for greasing the mould)


Method

  1. Make the sugar water
    Heat water and sugar in a pot until the sugar fully dissolves. Set aside to cool slightly.

  2. Mix the batter
    Place the glutinous rice flour in a bowl. Slowly add the sugar water while stirring until smooth and lump-free.

  3. Prepare the mould
    Lightly grease a heatproof dish or mould with oil. Pour in the batter.

  4. Steam the cake
    Steam over boiling water for 45–60 minutes, depending on thickness. Do not open the lid while steaming.

  5. Check and cool
    Insert a skewer into the centre. If it comes out clean, the cake is ready. Allow to cool before slicing.


Serving Tips

  • Enjoy fresh, or slice and pan-fry until golden

  • Can also be stir-fried or added to sweet soups


Notes

Chinese New Year sticky rice cake symbolises growth and good luck, meaning “higher every year”.
